Blue Bunny®
Cornhusker Salsa



INGREDIENTS:
1 6-pack box Blue Bunny® Chunky Strawberry FrozFruit® Bars
2 ears of corn, shucked
1 Jalapeño
1/4 cup finely chopped red onion
1/2 cup chopped fresh cilantro
2 Tbsp lime juice
Salt and pepper to taste
1 bag of tortilla chips

PREPARATION:
Lightly season grill with vegetable oil using an oil soaked rag or towel Preheat grill on medium high heat for 10 minutes.
Put on a pair of latex or kitchen gloves before preparing jalapeño. Slice jalapeño in half lengthwise and remove seeds and veins with spoon.
Place corn and jalapeño on grill and baste with oil, grilling until well roasted, about 6-8 minutes.
Remove from grill and cool completely.
Once cooled, finely chop jalapeño and cut corn from cob. Place in a bowl and set aside
Melt FrozFruit bars in a sauce pot on medium high heat. Discard sticks from saucepot once they have melted away from bar. Cook until bar liquid is reduced by half. Remove from heat and cool.
Combine chopped onion, jalapeño, cilantro and corn in mixing bowl. Mix in reduced FrozFruit bars and 2 Tbsp of lime juice.
Salt and pepper to taste.
Cover bowl and refrigerate until ready to serve.


Makes 4 servings.
