Butter Pecan Waffles



INGREDIENTS:
1 cup all-purpose flour
1/2 cup pecans, toasted and finely chopped
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
6 Blue Bunny® 100 Calorie Butter Pecan Bars
6 tablespoons butter

UTENSILS:
2 bowls
Waffle iron

PREPARATION:
Preheat waffle iron. In a glass bowl, melt Butter Pecan Bars for 30 seconds in microwave, making sure not to boil. Whisk together flour, pecans, baking powder, baking soda and salt. In a separate bowl, combine the melted ice cream bars, 6 tablespoons butter, and egg. In 3 increments, add the dry ingredients to the wet and beat until smooth (batter will be thick). Spray waffle iron with non-stick cooking spray. Spoon batter into waffle iron and cook according to manufacturer's instructions or until waffles are a golden brown. Serve immediately.

Serves 4.
