Chicken and Vegetable
Coconut Soup |
1 tsp. oil
2 oz. zucchini, diced
2 oz. yellow squash, diced
2 oz. red pepper, diced
2 oz. yellow pepper, diced
2 oz. green pepper, diced
2 oz. onion, diced
1 clove garlic, diced
2 oz. shiitake mushrooms, sliced
4 oz. cooked chicken, chopped
1 cup vegetable or chicken stock
1 Blue Bunny® Coconut FrozFruit® Bar
Hot sauce (optional)
Sauté vegetables in oil until golden brown. Add the chicken, stock, and Coconut FrozFruit® Bar. Simmer until thickened and ladle into a soup bowl. Sprinkle with hot sauce to taste, if desired. |
