Blue Bunny®
Vanilla Bean Guacamole |
4 ounces Blue Bunny® Premium All Natural Vanilla Ice Cream
2 avocados, peeled and seeded
1 teaspoon cilantro, finely chopped
¼ cup diced tomato
Juice from one lime
Pinch of salt and pepper to taste
This recipe can either be made in a food processor or in a bowl by hand. Start by scooping the All Natural Vanilla Ice Cream and putting off to the side to soften up for 2-4 minutes. The ice cream should be soft but not melted. Add the avocados, ice cream and lime into the blender, saving a few whole pieces of avocado for garnish. Squeeze the juice from the limes directly into the blender. Add the softened ice cream. Add the diced cilantro. Mix on low speed or by hand. Place the mixture into a serving bowl. Place the diced tomatoes and pieces of whole avocado on top. Sprinkle a pinch of salt over the tomatoes. Serve immediately.
