Mixed Greens with Pomegranate Cherry Dressing |
Mixed Greens:
8 oz. bag mixed salad greens, pre-washed
11 oz. can mandarin oranges, drained
½ cup crumbled blue cheese
½ cup walnuts
½ cup Pomegranate-Cherry dressing (recipe follows)
Dressing:
1 Blue Bunny® FrozFruit® Pomegranate Cherry Bar
1 cup frozen sweet cherries, thawed
¼ cup balsamic vinegar
2 tbsp. chopped shallots
2 tbsp. extra virgin olive oil
Blender
Colander
Knives
Salad Bowls
Dressing: Remove stick from Blue Bunny® FrozFruit® bar; place in blender. Add cherries, balsamic vinegar, shallots and olive oil. Blend until smooth. Yield: 1-1/3 cups. Refrigerate remaining dressing for future use.
Combine salad greens, orange segments, blue cheese and walnuts in salad bowl; toss with Pomegranate-Cherry Dressing
Serves 4.
