Blue Bunny®
Ice Cream Bunny Cupcakes |
Cupcakes:
2 cups all purpose flour
1 1/2 cup sugar
1/2 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/2 cup shortening
2 cups Blue Bunny® Chocolate Champion™ Ice Cream
2 large eggs
Decorations:
6 oz blue frosting
6 oz red frosting
2 oz white frosting
24 sugar cookie ears
M&M's
Chicklet gum
Cupcake Pans
Cupcake Liners
Mixer/handmixer
Rubber Spatula
Mixing Bowl
Cupcakes:
Preheat oven to 350°F. Line cupcake pan with paper liners. Combine dry ingredients; add shortening and eggs. Melt 2 cups of ice cream in microwave for 20 seconds. Once ice cream has melted, combine all ingredients in a mixing bowl. Mix until all ingredients are just incorporated. Fill cupcake liners half way full and bake for 20 minutes or until toothpick inserted into center of cupcake comes out clean. Cool cupcakes for 10 minutes. Remove them from pan and place on wire rack and cool completely.
Ears/Decorations:
To make the ears, make or purchase sugar cookie dough. Roll dough out flat, cut into "bunny ears" and bake. Cool. Take white frosting and fill in the entire ear, add the red frosting for the inner ear. Set aside To make the Blue Bunny, frost cupcakes with blue icing. Pipe two balls of white frosting for cheeks; make a nose with red frosting in the middle. Finish by adding two M&M's for eyes and two pieces of Chicklet gum for teeth. Add ears. Refrigerate or serve immediately.
Serves 12.
