Crispy meets creamy in this distinctive dessert. Rich, creamy Blue Bunny® PremiumBordeaux Cherry Chocolate Ice Cream is the perfect foil for these ultra-crispy cookies featuring whole pistachios and wine-soaked cherries.

Cook Time: 35 minutes


  • 8 ounces of 10x or confectionary sugar
  • 2 ounces cinnamon
  • 3 ounces brown sugar
  • 16 ounces whole-wheat graham flour
  • 1 egg white
  • 6 cherries in syrup (optional)
  • 2 ounces whole pistachios
  • 2 ounces sliced almonds
  • 4 ounces butter
  • One Silpat® or non-stick pan


Preheat the oven to 275 degrees. In a blender, combine all dry ingredients: 10x or confectionary sugar, brown sugar, cinnamon and whole-wheat graham flour. Mix the blender on low speed for a second to incorporate all ingredients. Add the cherries (in liquid) and butter and begin to mix on low speed. Remove the mixer and place into a bowl. Add the almond and pistachios and begin to mix by hand. Drop the dough in rounded tablespoons onto a Silpat or non-stick pan. If using a Silpat, place it on a sheet pan tray and bake for 35 minutes until golden brown.

Place the cookies on the plate and add the desired amount of BLUE BUNNY® Bordeaux Cherry Chocolate scoops on top.


If you do not have whole-wheat graham flour, you can also use all-purpose flour.
