Bunny Eclair
Sundae

This bakery favorite is elevated to hitherto unknown heights of decadence with Blue Bunny® Bunny Tracks® Ice Cream, malted milk balls and peanuts!
Difficulty: Easy
Makes: 2-4 servings

Ingredients

  • 2 custard filled eclairs
  • 1 tbsp original malted milk powder
  • 4 scoops Blue Bunny® Premium Bunny Tracks® Ice Cream
  • 6 malted milk balls, crushed, for garnish
  • 1 tbsp Spanish peanuts, for garnish

Instructions

Cut each eclair in half horizontally, using a serrated knife. Scoop out custard filling and place in a small bowl (there should be about a scant 1/2 cup filling in each eclair). Stir malted milk powder into custard filling. Set aside.

Spread 2 tablespoons hot fudge topping into bottom shell of each eclair. Top each with 2 scoops of ice cream. Spoon custard mixture over ice cream. Sprinkle with malted milk balls and peanuts.
