Blue Bunny® Bunny Tracks® Bombe
What could be better than Bunny Tracks® plus chocolate and an original ice cream sandwich? It all adds up to a delicious little dessert that's fun to put together - and even more fun to gobble up!
Difficulty: Easy
Ingredients
- 2 ounces semi-sweet chocolate
- 1 scoop Bunny Tracks® Premium ice cream
- 1 Blue Bunny® Vanilla ice cream Sandwich
Instructions
In a double boiler, melt 2 ounces of semi-sweet chocolate with coconut oil. (The oil helps keep the chocolate smooth.) Note: Do not heat chocolate over 89º F. Pour chocolate into a chilled basin or flex pan.
Rotate chocolate inside the basin or flex pan and cool by sticking basin into bowl of chilled water and rotating until chocolate solidifies. Chocolate may also be cooled in the freezer. (See video).
Once chocolate is solid, pour into basin and repeat cooling two more times so chocolate has multiple layers. If using a solid basin, flip it upside down and give a sharp shake. If using a flex pan, just pop out the chocolate bombe. Fill chocolate bombe with Bunny Tracks®.
With a knife, slice both wafers from the ice cream sandwich and place side by side lengthwise. After placing the ice cream in the chocolate half-sphere, place it on top of the wafers and slice around the bombe until it fits the shape of the bombe. Place wafers from Vanilla Ice Cream Sandwich on bottom of bombe.
Hints
A flex pan is a flexible, plastic mold that is used for baking, freezing and molding food items. Using a flex pan for this recipe is much easier than using a solid basin.
