Ice Cream Pancakes

Chef Joe Ciminera takes traditional pancakes up a notch using Blue Bunny® Premium Bunny Tracks® Ice Cream.

Makes: 1 serving

Ingredients

2 scoops Blue Bunny® Premium Bunny Tracks® Ice Cream

2 cups pancake batter

2 teaspoons oil

2 ounce syrup

Instructions

In a bowl mix the ready made pancakes to produce a batter. Add the ice cream and mix together. In a 10" saute pan add the oil on high heat. Add the pancake batter and lower the flame. Cook on both sides and transfer to a plate. Finish with one more scoop of ice cream on top of the pancakes.
