Chicken and Vegetable
This thick, hearty soup will warm you up on a chilly day. Sauté zucchini, yellow squash, peppers, onion, garlic and shiitake mushrooms with precooked chicken, soup stock and a Blue Bunny® Coconut FrozFruit® Bar, and finish with a dash of hot sauce.
- 2 oz. yellow squash, diced
- 2 oz. yellow pepper, diced
- 2 oz. green pepper, diced
- 2 oz. shiitake mushrooms, sliced
- 4 oz. cooked chicken, chopped
- 1 cup vegetable or chicken stock
- 1 Blue Bunny® Coconut FrozFruit® Bar
Sauté vegetables in oil until golden brown. Add the chicken, stock, and Coconut FrozFruit® Bar. Simmer until thickened and ladle into a soup bowl. Sprinkle with hot sauce to taste, if desired.
