Festive Minty Ice Cream
Chocolate Cake

This marvelous devil's food cake blends the flavors of Blue Bunny® Premium Homemade Chocolate Ice Cream and Blue Bunny® Perfectly Peppermint Ice Cream with a cool hint of Peppermint Schnapps!

Ingredients

  • Whipped cream
  • 1.75 QT Blue Bunny® Premium Homemade Chocolate Ice Cream
  • 56 ounce Blue Bunny® Perfectly Peppermint Ice Cream
  • 1 package devil's food cake mix
  • 1 egg
  • 1/2 cup milk
  • 2 cup whipping cream
  • 2 tbsp Peppermint Schnapps (optional)
  • peppermint candies

Instructions

Mix cake mix with egg and milk. Bake according to instructions on box in one 9-inch round cake pan. Whip 1 cup cream until soft peaks form. Beat in 4 cups softened chocolate ice cream. Return to freezer until firm but not hard, about 45 minutes. Repeat with remaining cream, 4 cups peppermint ice cream and Peppermint Schnapps. Cut cake layer horizontally in half. Place one half, cut side up, on bottom of 9-inch springform pan. Spoon half of chocolate ice cream mixture and half of peppermint mixture over cake. Swirl to combine. Repeat. Cut remaining half of cake into 8 wedges. Trim off edges. Place on top of ice cream mixture. Return cake to freezer for several hours or overnight. To serve: place cake on serving plate. Run a sharp knife around outside edges. Carefully remove sides of pan. Garnish with additional whipped cream and peppermint candy. Refrigerate up to 20 minutes before serving.
