Frosty Strawberry Coconut Squares

Coconut, strawberries, vanilla wafers and Blue Bunny® Frozen Yogurt Strawberry Banana make these frozen squares a cool tribute to the tropics.

Makes: 9 servings


  • 4 cups Blue Bunny® Frozen Yogurt Strawberry Banana, softened
  • 1 cup sweetened coconut flakes
  • 3/4 cup vanilla wafer crumbs, about 24 wafers
  • 3 tbsp. butter, melted
  • 3/4 cup plus 2 tablespoons strawberry preserves, divided
  • 2 cups whipped topping


Preheat oven to 350° F. Mix together coconut, wafer crumbs and butter, press into bottom of 8 x 8-inch baking pan. Bake 10 minutes or until edges are golden. Cool. Spread cooled crust with 3/4 cup preserves. Spoon frozen yogurt over preserves, spreading evenly. Spread whipped topping over frozen yogurt; swirl in remaining 2 tablespoons preserves. Freeze at least 3 hours, until solid. Cut into squares.
