Hot Fudge Sundae
Ice Cream Cake

This simple but effective recipe is really a giant sandwich of chocolate cake with Blue Bunny® Premium Vanilla Ice Cream topped with whipped cream and homemade hot fudge sauce!
Difficulty: Easy
Makes: 12 to 16 servings.


  • 1.75 QT Blue Bunny® Premium Vanilla Ice Cream
  • 1 box chocolate fudge cake mix
  • 1 can evaporated milk
  • 1 3/4 cup sugar
  • 4 square unsweetened chocolate
  • 1/4 cup butter or margarine
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • whipped cream, mint leaves, maraschino cherries


Preheat oven to 350 degrees F. Grease and flour 13x9x2-inch pan. Prepare, bake and cool cake following package directions for basic recipe. Remove cake from pan. Split cake in half horizontally. Put bottom layer back in pan. Cut ice cream into even slices and place evenly over bottom of cake layer (use all the ice cream). Place top cake layer over ice cream. Cover and freeze.

For Fudge Sauce:
Combine evaporated milk and sugar in medium saucepan. Stir constantly on medium heat until mixture comes to a rolling boil. Boil and stir for 1 minute. Add unsweetened chocolate and stir until melted. Beat over heat until smooth. Remove from heat. Stir in butter, vanilla extract and salt. To serve, cut cake into serving squares. Spoon hot fudge sauce on top of each cake square. Garnish with whipped cream, maraschino cherries and mint leaves, if desired.

Blue Bunny's Hot Fudge Sundae Ice Cream Cake is a wonderful blend of chocolates (cake and topping) and Blue Bunny's quality vanilla ice cream, that can be made ahead. It's easy to prepare, too. I served it with whipped topping and cherries on top and received rave reviews from everyone at a bridal shower. I also included it in a meal for a young family after their baby's birth and they said they felt like they were eating at a great restaurant. The fudge topping is creamy and flavorful--the best I've ever tasted. Serve this dish to anyone you love who likes delicious chocolate and ice cream.
