Blue Bunny® Ice Cream Christmas Sleigh
Create a winter wonderland on your holiday table with this fanciful sleigh. Chocolate cake and peppermint ice cream garnished with frosting and candy canes transform into a cake roll sleigh driven by an ice cream snowman.
Difficulty: Moderately Easy
Ingredients
- 1/2 gallon Blue Bunny® Peppermint Stick Ice Cream
- Frosting and candy canes for decoration
Instructions
Mix cake batter according to directions on box. Split cake batter in half, bake in two 13" x 9" baking pans and cool. Thawice cream at room temperature for ten minutes. Scoop ice cream onto one of the 13" x 9" cakes, making sure to spread evenly all over cake. Place in freezer for ten minutes to harden. Meanwhile, slice the other 13" x 9" cake into rectangles and decorate with frosting and candy canes to make bottom of sleigh.
Remove ice cream cake from freezer and roll completely (don't worry about the cake cracking!), and place back in freezer for 5 minutes. Take cake roll out of freezer, cut to the same width as the sleigh, and place on one end of the sleigh. Decorate cake roll with frosting and candy canes. Make snowman figure with three scoops of ice cream, decorate with frosting and serve immediately.
