Caramel Coffee Ice Cream Parfaits

Coffee, caramel, cookies and ice cream unite in this "coffee house" favorite.

Prep Time: 15 minutes - chill time extra
Makes: 4 servings


  • 3 Blue Bunny® Sweet Freedom® Caramel & Vanilla Ice Cream Bars
  • 1 box (4-serving size) instant sugar free vanilla pudding mix
  • 1 cup fat-free milk
  • 3/4 cup brewed coffee, cold
  • 4 sugar free chocolate sandwich cookies
  • 16 fresh raspberries


In a medium bowl, whisk together pudding mix, milk and coffee until mixture begins to thicken slightly. Chill at least 20 minutes.
For each parfait, cut up an ice cream bar into eighths, layer a little more than 1/3 the pieces in a parfait glass top with 1 tablespoon coffee pudding and 1/2 a crumbled sandwich cookie and 2 raspberries. Repeat layers once ending with raspberries. Use remaining pieces of ice cream bar in the next sundae. (Each sundae uses 3/4 of an ice cream bar.) Remaining coffee pudding sauce may be spooned over angel food cake, pancakes, etc. Serve parfaits immediately.
