Blue Bunny® It's Your Birthday Party Cake
These easy to make mini ice cream cakes will be the highlight of your child's birthday party.

Ingredients
- 2containers (56 oz. each)
- Blue Bunny®Premium Birthday PartyIce Cream
- 1 box (18.25 oz.) vanilla cake mix, mixed using water, oil and eggs as package directs
- 3 containers (12 oz. each) whipped vanilla frosting
- 3 cans (6.4 oz.) colored decorator frosting (with decorator tips), your choice of colors
Instructions
Preheat oven to 350 degrees F. Spray the bottom only of a 13 x 9-inch baking pan with non-stick cooking spray. Prepare cake mix as package directs, pouring about 2-1/4 cups batter in bottom of each pan*. Bake 11 to 14 minutes, until toothpick inserted in center tests clean. Cool on wire rack. Remove ice cream from freezer 10 minutes before using. Spread 1 container ice cream over each cake; using a spatula dipped in hot water will make spreading the ice cream easier. Freeze at least 1 hour, or until solid. Cut each cake into 6 mini cakes, using 3-1/2 inch pastry cutter**. Place 1 mini cake on a wax paper lined tray; return remaining pan of cakes to freezer. Spread sides and top of each mini cake with about 1/2 cup of vanilla frosting; pipe colored frosting around upper and lower edges of cake; sprinkle with colored decorations. Return to freezer. Repeat with remaining cakes. Freeze 1 hour or until solid. Serve frozen.
Variations
*Cake batter can be baked in 1 (13 x9-in.) baking pan according to package directions. When cool, cut cake in half horizontally, forming 2 layers. Spread 1 container ice cream in bottom of each of 2 (13 x9-in.) pans. Top each pan with one layer of cake, cut side down. Freeze until solid. Using pastry cutter, cut into 3-1/2-in. circles. Place 1 mini cake, cake side down on wax paper lined tray; proceed as recipe directs.
Hints
**To substitute for a pastry cutter, cut a 3-1/2-in. circle out of cardboard, cover with foil, twisting ends of foil into a handle. Place on top of ice cream and cut out mini cakes using a sharp knife.
