Mini Ice Scream Cakes

Everyone will scream for more! Adorable cookie ghosts adorn these tasty ice cream cakes made with Blue BunnyVanilla Ice Cream and chocolate cupcakes. This recipe is a BlueBunnyRecipe Contest runner-up!

  • 3 cups Blue Bunny® Vanilla Ice Cream, softened
  • 12 chocolate cupcakes
  • 1 can store-bought white icing
  • 1/8 teaspoon orange food coloring
  • 1/8 teaspoon black food coloring
  • 6 peanut butter sandwich cookies, cut in halves
  • 24 Mini M&Ms® candies
  • 12 paper muffin cups
  • Toothpicks


Line a 12-cup muffin tin with paper or foil muffin cups. Place 1/4 cup softened ice cream in each tin. Flatten with spoon. Cut off the bottom half of each cupcake, leaving the muffin top and a part of the cupcake, and place one in each ice cream-filled muffin cup. Remove half of the icing from the can and place in a bowl; mix with 1/8 teaspoon of orange food coloring. Ice the mini ice scream cakes with the orange frosting. Frost peanut butter sandwich cookie halves with white frosting. Use 2 Mini M&Ms as eyes for each ghost. Dip a toothpick in black food coloring and draw a small "o" for the mouth of each ghost. Keep in freezer until ready to enjoy.
