Peanut Butter Panic
Ice Cream Cookies
It's a peanut lover's paradise! Whip up a batch of Chef Joe's homemade peanut butter cookies and serve them fresh from the oven with Blue Bunny® Premium Peanut Butter Panic®.
Difficulty: Moderately Easy

Ingredients
- 2 2-oz. scoops of Blue Bunny® Premium Peanut Butter Panic®
- 1 tablespoon confectionary sugar
- 2 tablespoons mixed chopped nuts
Instructions
In a mixing bowl, combine all the dry ingredients: brown sugar, flour and confectionary sugar. Then begin to mix on a very slow speed. Stop the machine and add the butter into the mixing bowl. Incorporate the flour and the rest of the dry ingredients. Raise the speed to high to really mix the ingredients together. Lower the speed and add the milk and egg whites. While the paddle is still mixing, add the mixed nuts. Pour the mixture onto plastic wrap, roll and place into the refrigerator to chill. Cut off small wedges and place them onto the Silpat®, keeping space between them. Place in the oven in 350-degree oven for 12 minutes until they turn brown. Remove the cookies from the oven and scoop someice creamover them.
Hints
Try breaking the cookies while they are hot over the cold ice cream - it's a thrill!
