Pecan Pumpkin Crisp
Ice Cream Parfait
As easy to make as it's delicious, this savory parfait alternates layers of baked, spiced pumpkin crisp made with a topping of brown sugar, rolled oats, butter, flour and whole pecans, with creamy Blue Bunny® Premium Homemade Vanilla ice cream.

30 to 35 minutes
- 1/3 cup all-purpose flour
- 4 scoops Blue Bunny® Premium Homemade Vanilla ice cream
Preheat oven to 375°F degrees. Combine pumpkin puree, cinnamon, allspice and nutmeg in a small bowl and mix thoroughly. Spread mixture into baking dish. In a medium bowl, stir together brown sugar, oats, flour, and pecans. Mix in butter until mixture resembles coarse crumbs. Sprinkle over pumpkin spice mixture. Bake uncovered for 30 to 35 minutes or until topping is golden brown. Cool completely.
To serve, layer pecan pumpkin crisp andice cream in parfait glasses. Begin and end with the crisp mixture. Serve immediately.
