Peppermint Fudge Charlotte Russe
A perfect finale to any holiday meal using Blue Bunny Perfectly Peppermint Ice Cream!

Ingredients
- 10 chocolate sandwich cookies
- 1 container (1.75 QT) Blue Bunny® Premium Perfectly Peppermint Ice Cream
- 5 oz. (5 squares) semi-sweet chocolate, finely chopped
- 5 tbsp. half and half cream
- 25 creme filled pirouette cookies, cut in half
Instructions
Line a 9-1/2 x 5-1/2-inch loaf pan with heavy-duty foil; spray with non-stick cooking spray. Crush sandwich cookie to fin crumbs; sprinkle 1/2 cup onto bottom of foil. Spread with 3 cups softened ice cream. Freeze until firm, at least 1 hour. Meanwhile, place chocolate and syrup in a small bowl. Heat cream in microwave-safe bowl until hot, 20 seconds. (Watch closely so cream does not boil over.) Pour over chocolate mixture. Stir until smooth. Set aside to cool to room temperature. Remove ice cream from freezer, spread with ganache and remaining ice cream. Sprinkle with remaining cookie crumbs. Freeze at least 8 hours. Lift from pan. Turn onto plate, remove foil and press pirouette cookies to side of Russe. Cut into 8 to 10 slices.
