Polar Caramel Latte Squares

Cheesecake, butterscotch caramel, chocolate-covered toffee bits and pecans add excitement to these chewy latte squares.

Makes: 9 servings


  • 8 Blue Bunny® Premium Simply Vanilla Ice Cream Sandwiches
  • 1 tbsp instant coffee
  • 1 24.3 oz container ready-to-eat cheescake filling
  • 1/3 cup plus 3 tbsp butterscotch-caramel topping, at room temperatures, divided
  • 3 tbsp chocolate covered toffee bits
  • 3 tbsp pecan pieces


Dissolve coffee in 1 tablespoon hot water in large bowl; stir in cheesecake filling, mixing well. Fold in 1/3 cup butterscothc-caramel topping, leaving some marbling. Place ice cream sandwiches in bottom of 8 x 8-inch baking pan, cutting to fit. Spread with cheesecake mixture; drizzle with 3 tablespoons butterscotch-caramel topping. Sprinkle with toffee bits and pecans. Freeze at least 4 hours. Cut into squares to serve.
