Diabetic Peach Cobbler
with Vanilla Ice Cream

Here is a great peach cobbler dessert from an iScream Team member who states, "Diabetic for the past 25 years, I was an ice cream lover prior to the diabetes, and still am one."

Ingredients
- Blue Bunny Vanilla Ice Cream
- Desired filling (see instructions)
- 3 Tbsp. margarine or butter
- 1/2 teaspoon ground cinnamon (optional)
Instructions
Make any kind of fruit pie using Splenda. Prepare the filling and keep hot. For topping, mix flour, sugar, baking powder, and, if desired, cinnamon. Cut in margarine till mixture resembles coarse crumbs. Combine egg and milk. Add to flour mixture, stirring just to moisten. Transfer filling to an 8x8x2 inch baking dish. Drop topping into 6 mounds atop hot filling. Bake in a 400* oven 20 to 25 minutes or till a toothpick inserted into topping comes out clean. Spoon one or two spoons of vanilla ice cream on top so it drizzles down the side. Anything any better God keeps it in heaven for himself.
Hints
For later servings, make sure to microwave the cobbler until it's bubbling hot before serving with more ice cream!
