Pizza for dessert! A soft sugar cookie crust topped with Blue Bunny® Bubble Gum Ice Cream, sprinkles and whipped cream. Every meal should be this deliciously fun.

Equipment: #8 ice cream scoop, off-set spatula, baking sheet, rolling pin
Prep Time: 30 minutes

Makes: 1 - 6" pizza, 8 servings per recipe


  • 5 cups (2-1/2 lbs.) Blue Bunny® Bubble Gum Ice Cream, #829675
  • 16 oz. sugar cookie dough
  • Sprinkles/candy for decorations
  • Whipped cream for decorations


To make the pizza cookie crust, form sugar cookie dough into a ball. Using a floured work surface, roll sugar cookie dough into a 12" circle. Transfer rolled out cookie dough onto lightly greased baking sheet or pizza pan. Bake according to cookie packages directions. Remove cookie from oven and let cool. Using a #8 ice cream scoop, scoop 5 cups of Blue Bunny Bubble Gum Ice Cream on top of the sugar cookie crust. Using an off-set spatula, spread out ice cream leaving 1/2" of the edge of cookie crust uncovered. Place cookie pizza in freezer until ready to serve. Decorate pizza to order with sprinkles/candy and whipped cream.


Use Blue Bunny Birthday Cake or Scooper Hero® Ice Cream for a fun variation. Brownies, cakes, and pie crusts can be substituted for sugar cookie dough. Make a 6" pizza by using 2½ cups of ice cream and 8 oz. of sugar cookie dough.


Sugar cookie dough can be prebaked, individually wrapped, and stored frozen.
