Degree of Difficulty:
Ice cream scoops
1-#12 scoop (3-1/8 oz.) Blue Bunny® Premium Chocolate Ice Cream, #19506
1-#10 scoop (3-7/8 oz.) Blue Bunny® Premium Chocolate Ice Cream, #19506
4 oz. (1/4 cup) raspberry sauce
12 chocolate chips
2 black licorice strings
Quick Raspberry Sauce:
20 oz. (1-1/4 cup) frozen raspberries in light syrup, thawed
4 Tbsp. light corn syrup
2 tsp. raspberry-flavored liqueur
Quick Raspberry Sauce Recipe: Reserve 2/3 cup fruit from raspberries. Place remaining fruit and juice in food processor or blender with corn syrup, process until smooth. Strain through sieve into small bowl, stir in reserved fruit and raspberry liqueur.
Place the #12 scoop of Blue Bunny® Premium Chocolate Ice Cream in the center of the plate, place the #10 scoop of Blue Bunny® Premium Chocolate Ice Cream in front of the larger scoop. Wrap one of the licorice strings over the top of the large scoop down the center length wise to form the beetle body. Take raspberry sauce and pour over the larger chocolate scoop. Put the chocolate chips along the top of the larger scoop of ice cream. Place two chocolate chips on smaller scoop of chocolate ice cream for the eyes. Cut licorice into two even strips, attach to the smaller scoop to resemble antennas.
Substitute Chocolate Ice Cream with Blue Bunny® Vanilla. Use strawberries in sauce instead of raspberries.
Ice cream loses flavor and texture if allowed to melt too much. For best dipping results when using a 3-gallon tub, begin scooping close to tub wall, cutting about 1/2 inch down.
