#10 ice cream scoop, tongs, brush, small bowl for oil
3 small pineapples, peeled and cored
2 Tbsp. (1 fl. oz.) vegetable oil
2 Tbsp. lime zest
1/2 cup (4 oz.) coconut flakes, toasted
12-#10 scoops (3 lbs.). Blue Bunny® No Sugar Added Fat Free Vanilla Ice Cream, #553091
3 cups (24 fl. oz.) no sugar added mango sauce
Preheat grill. Cut each pineapple lengthwise into 12 slices. Brush pineapple with vegetable oil and place on grill. Grill each side of pineapple for 2 minutes. Place pineapple slices into dessert bowls (three slices per bowl). Place one #10 scoop (3-7/8 oz.) of Blue Bunny No Sugar Added Fat Free Vanilla Ice Cream on top of pineapple. Drizzle no sugar added mango sauce over ice cream, decorate with lime zest and coconut flakes. Serve immediately.
Use no sugar added passion fruit, banana, or kiwi sauce instead of no sugar added mango sauce. Use macadamia or Brazilian nuts instead of coconut and lime zest.
Pineapple can be grilled and stored until ready to serve. Just heat pineapple slices in microwave for 15 seconds before serving. Ice Cream can be pre-scooped into frozen bowls and stored until ready to serve.
